Ingredients
Main Components
- 2 cups cooked rice
- 2 cups rotisserie chicken, shredded
- 1 cup shredded Cheddar cheese
- 1/2 cup cooked peas
Sauce
- 3 tablespoons butter
- 3 cloves garlic, minced
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon fresh black pepper
- 1/4 teaspoon onion powder
- 1 cup heavy cream or whole milk
- 1/2 cup coconut milk
- 1/4 cup sour cream
- 2 tablespoons lemon juice
Toppings
- 1/2 cup green onions, sliced
- 1/2 cup olives, sliced
- 1/4 cup raisins or craisins
- 1 cup tomatoes, diced
- 1/2 cup pineapple chunks
- 1/2 cup mandarin oranges
- 1/2 cup almonds, slivered
- 1/2 cup mushrooms, sliced
- 1/2 cup bell peppers, diced
- 1/4 cup shredded coconut
- 1/2 cup celery, sliced
- 1/2 cup shredded carrots
- 1/2 cup water chestnuts, sliced
- 1/4 cup diced red onions
- 1 cup wonton strips
Instructions
1. Prepare the Sauce:
In a medium saucepan over medium heat, melt the butter. Add minced garlic and sauté until fragrant, about 1 minute. Stir in the flour until the mixture forms a paste. Gradually whisk in the heavy cream and coconut milk until smooth. Add salt, pepper, and onion powder. Cook, stirring constantly, until the sauce thickens, approximately 3-5 minutes.
2. Finish the Sauce:
Lower the heat to a simmer and add the sour cream and lemon juice to the sauce. Stir to combine, then simmer for another 2 minutes. Remove from heat and set aside.
3. Assemble the Bowl:
Divide cooked rice into four bowls. Layer the shredded rotisserie chicken over the rice, then pour the prepared sauce evenly across each bowl.
4. Add Cheese and Heat:
Sprinkle shredded Cheddar cheese over the sauce-covered mixture. Place each bowl under a broiler for 2-3 minutes, or until the cheese is melted and bubbly.
5. Finalize with Toppings:
Top each bowl with desired toppings: green onions, olives, raisins/craisins, tomatoes, pineapple chunks, mandarin oranges, almonds, mushrooms, bell peppers, shredded coconut, celery, shredded carrots, water chestnuts, diced red onions, and cooked peas.
6. Crisp and Serve:
Finish with a handful of wonton strips for crunch. Serve immediately and enjoy your flavorful adventure!
