Exquisite Breakfast Bowl with Sautéed Fruits and Nutty Chilated Oats



Ingredients



- 1 cup oatmeal
- 2 tablespoons chia seeds
- 2 slices toast
- 2 tablespoons peanut butter
- 1/2 cup mashed berries (mixed variety)
- 4 large eggs
- 1/2 cup crumbled feta cheese
- 1 cup mixed salad greens
- 1 cup whole milk
- Zest and juice of 1 lemon
- Zest and juice of 1 key lime
- 1 mango, peeled and diced
- 1 banana, sliced
- 1 apple, cored and chopped
- 1/4 cup sweetened fruit purée
- 1 cup creamy whole milk yoghurt
- 1/2 cup fresh strawberries, sliced
- 2 kiwis, peeled and sliced
- 1/4 cup toasted coconut
- 1/4 cup slivered almonds
- 2 tablespoons almond butter
- 1/2 cup granola
- 2 tablespoons hemp seeds
- 1/2 cup frozen pineapple chunks
- 1 cup prepared overnight oats
- 4 pancakes, cooked according to your favorite recipe
- 1/4 cup syrup of your choice

Instructions



1. Prepare the Chilated Oats:
- Combine 1 cup oatmeal, 2 tablespoons chia seeds, and 1 cup whole milk in a pot.
- Simmer over medium heat, stirring occasionally until creamy (PT10M - 10 minutes).
- Remove from heat and set aside.

2. Sauté the Fruits:
- In a separate skillet, add 1 tablespoon of almond butter over medium heat.
- Add sliced banana, chopped apple, diced mango, and 1/2 cup frozen pineapple chunks.
- Add the zest and juices of 1 lemon and 1 key lime.
- Sauté until fruit is soft and aromatic (PT5M - 5 minutes).
- Stir in the sweetened fruit purée and set aside.

3. Scramble the Eggs:
- Whisk 4 large eggs with salt and pepper.
- Pour into another heated skillet over medium heat.
- Cook while gently stirring until softly scrambled (PT5M - 5 minutes).
- Fold in 1/2 cup crumbled feta cheese and mixed greens and continue to cook until greens wilt (PT2M - 2 minutes).

4. Assemble the Bowl:
- Spread 1 tablespoon of peanut butter on each slice of toast.
- Divide the chilated oatmeal among 4 serving bowls.
- Top each with a portion of sauteed fruits, scrambled eggs, and greens.
- Add slices of fresh strawberries, kiwis, and a scoop of creamy yoghurt.
- Garnish with toasted coconut, slivered almonds, granola, and hemp seeds.

5. Finish with Pancakes:
- Serve with two pancakes drizzled with your choice of syrup alongside the breakfast bowl.
