Ingredients
For the Herb-Crusted Chicken:

- 2 large eggs

- 1 cup panko breadcrumbs

Instructions
1. Prepare the Chicken Breast:
- Place the chicken breasts between two pieces of plastic wrap. Using a meat mallet, gently pound to an even thickness of about 1/2 inch.
- Season both sides of the chicken with salt and pepper.
2. Coating Setup:
- On a shallow plate, place the flour.
- In a bowl, whisk together the eggs and water until well combined.
- On another plate, mix together the panko breadcrumbs, parsley, thyme, rosemary, garlic powder, onion powder, salt, and pepper.
3. Coat the Chicken:
- Dredge each chicken breast in the flour, shaking off the excess.
- Dip the chicken into the egg mixture, ensuring it is fully coated.
- Finally, press the chicken into the breadcrumb mixture, ensuring a good coating by pressing down lightly.
4. Cook the Chicken:
- Heat the olive oil in a large skillet over medium heat.
- Add the chicken breasts to the skillet, cooking until golden brown and cooked through, about 5-6 minutes per side.
- Transfer the cooked chicken to a plate and set aside.
5. Prepare the Lemon Butter Sauce:
- In the same skillet, reduce the heat to low and melt the butter.
- Stir in the lemon juice, lemon zest, and chicken broth. Bring to a simmer and let it cook until slightly thickened, which should take about 3-4 minutes.
- Season with salt and pepper to taste.
6. Serve:
- Place the cooked chicken breasts on serving plates.
- Drizzle the lemon butter sauce over the chicken.
- Garnish with additional chopped parsley if desired.
