Exquisite Lemon-Herb Roast Chicken
Ingredients
- 1 whole chicken (about 4-5 pounds)
- 1 lemon, halved
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup chicken broth
Instructions
1. Preheat the oven: Set your oven to 375°F.
2. Prepare the chicken: Pat the whole chicken dry with paper towels, ensuring the skin is as dry as possible. This helps it crisp up during roasting.
3. Season the chicken: Squeeze the juice from half of the lemon over the chicken, inside and out. Place the lemon halves inside the cavity of the chicken.
4. Create the herb mixture: In a small bowl, combine the minced garlic, olive oil, chopped rosemary, thyme, parsley, salt, and black pepper. Mix thoroughly to create an herb paste.
5. Apply the herb paste: Rub the mixture generously over the entire chicken, ensuring to reach under the skin when possible for deeper flavor infusion.
6. Roast the chicken: Place the chicken breast-side up in a roasting pan. Pour the chicken broth into the bottom of the pan to keep the chicken moist.
