Festive Gingerbread Pecan Pie Squares with Peppermint Marshmallow Topping

Ingredients

- 1 package (16 oz) gingerbread cookie mix
- 1/2 teaspoon pumpkin spice
- 1 tablespoon holiday nog
- 1 pre-made pecan pie filling (14 oz)
- 1/2 cup crushed peppermint candies
- 1/2 cup semi-sweet chocolate chips
- 2 cups hot cocoa mix
- 1 cup mini marshmallows

Instructions

1. Preheat the Oven:
Preheat your oven to 350°F (175°C).

2. Prepare the Gingerbread Base:
In a large mixing bowl, combine the gingerbread cookie mix with pumpkin spice. Add in the holiday nog and stir until fully incorporated to form a dough.

3. Create the Base Layer:
Press the gingerbread dough evenly into the bottom of a greased 9x13 inch baking dish to form the crust. Ensure the layer is uniform for even baking.

4. Add Pecan Pie Filling:
Spread the pecan pie filling evenly over the gingerbread base, ensuring a smooth, even layer.

5. Crush Peppermints and Melt Chocolate:
In a microwave-safe bowl, microwave the chocolate chips in 20-second intervals, stirring in between until fully melted. Stir in the crushed peppermint candies until well mixed.

6. Drizzle Chocolate Layer:
Drizzle the melted chocolate peppermint mixture over the pecan pie filling layer. Use a spatula to spread it evenly if necessary.

7. Prepare Hot Cocoa Topping:
In a medium bowl, mix the hot cocoa mix with a few tablespoons of holiday nog to create a thick paste. Carefully spread this over the top chocolate layer.

8. Add Marshmallow Topping:
Sprinkle the marshmallows generously over the hot cocoa layer, pressing them slightly into the mixture to adhere.

9. Bake the Squares:
Place the baking dish in the preheated oven and bake for approximately 25 minutes or until the marshmallows begin to turn a light golden brown.

10. Cool and Slice:
Remove from the oven and let cool completely on a wire rack. Once cooled, slice into squares and serve.
