Flavorful Black Bean and Walnut Veggie Patties
Ingredients
- 1 cup canned black beans, drained and rinsed
- 2 cloves garlic, minced
- 3 green onions, finely chopped
- 1/2 cup walnuts, finely chopped
- 1/2 cup rolled oats
- 1 tsp chili powder
- 1 tsp smoked paprika
- 2 tbsp tamari
- 1 tbsp red wine vinegar
- 1 tbsp maple syrup
- 2 tbsp oil (for frying)
Instructions
1. Prepare the Ingredients:
- In a large bowl, mash the black beans using a fork or potato masher until mostly smooth, leaving a few whole beans for texture.
- Add the minced garlic, chopped green onions, and chopped walnuts to the bowl, mixing thoroughly.
2. Combine the Dry Ingredients:
- Stir in the rolled oats, chili powder, and smoked paprika. Mix well to ensure even distribution of the spices throughout the mixture.
3. Add Flavorful Liquids:
- Pour in the tamari, red wine vinegar, and maple syrup. Using a large spoon, stir until the mixture is completely combined and sticks together.
4. Form the Patties:
- Divide the mixture into four equal portions. Using your hands, shape each portion into a firm patty about 3/4 inch thick.
5. Pan Fry the Patties:
- Heat the oil in a non-stick skillet over medium-high heat.
- Carefully add the patties to the skillet, cooking for 3-4 minutes on each side until they develop a golden-brown crust, being cautious not to overcrowd the pan.
6. Serve:
- Remove from skillet and let cool slightly before serving. These patties pair splendidly with a fresh salad or as a filling in a bun with your favorite toppings.
