Ingredients
- 1 cup green lentils
- 2 tablespoons vegetable oil

Instructions
1. Prepare the Lentils:
- Rinse 1 cup of green lentils under cold water.
- Place lentils in a medium saucepan, cover with water by 2 inches, and bring to a boil.
- Reduce heat and simmer uncovered for about PT20M (20 minutes) until lentils are tender but not mushy. Drain and set aside.
2. Heat the Oil:
- In a large wok or skillet, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering.
3. Sauté Aromatics:
- Add 1 tablespoon of finely grated ginger, 1 medium sliced onion, and 3 minced garlic cloves.
- Stir-fry for PT2M (2 minutes) until aromatic and the onion begins to soften.
4. Add Vegetables:
- Add 2 julienned carrots and 1 thinly sliced red bell pepper.
- Stir-fry for PT4M (4 minutes) until the vegetables are tender-crisp.
5. Combine and Season:
- Add the cooked lentils to the vegetable mixture in the wok.
- Pour in 3 tablespoons of soy sauce, 1 tablespoon of sesame oil, and 1 tablespoon of fish sauce.
- Stir-fry for PT3M (3 minutes) to combine flavors thoroughly and heat the lentils through.
6. Finish and Serve:
- Taste and adjust seasoning if necessary, noting that both soy and fish sauce are salty.
- Transfer to a serving bowl.
