Flavorful Tuna and Bulgur Salad with Lemon-Infused Dressing



Ingredients


- 8 ounces tuna, drained and flaked
- 1 cup bulgur
- 1 cup navy beans, cooked and drained
- 2 medium carrots, peeled and grated
- 1/2 cup green olives, pitted and sliced
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste

Instructions



1. Prepare the Bulgur:
- Rinse 1 cup of bulgur under cold water.
- In a medium saucepan, bring 2 cups of water to a boil over high heat.
- Add the rinsed bulgur to the boiling water, stir, cover, and reduce the heat to low.
- Simmer for approximately 12 minutes, or until the bulgur is tender and has absorbed most of the water.
- Remove from heat and let it stand, covered, for an additional 5 minutes. Fluff with a fork.

2. Make the Dressing:
- In a small bowl, whisk together 3 tablespoons of olive oil and 2 tablespoons of lemon juice.
- Season with salt and pepper to taste, mixing well until emulsified.

3. Assemble the Salad:
- In a large mixing bowl, combine the cooked bulgur, flaked tuna, cooked navy beans, grated carrots, and sliced olives.
- Pour the lemon-infused dressing over the mixture.
- Toss gently to evenly coat all ingredients with the dressing.
- Taste and adjust seasoning with additional salt and pepper if necessary.

4. Serve:
- Serve the salad chilled or at room temperature as a refreshing lunch option.
