Fluffy Apple Cider Vinegar Pancakes
Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 tablespoons sugar
- 1 egg
- 1 1/4 cups milk
- 2 tablespoons apple cider vinegar
- 2 tablespoons unsalted butter, melted
- Additional butter for frying
Instructions
1. Combine Dry Ingredients
In a large bowl, whisk together the flour, baking soda, salt, and sugar until well combined.
2. Mix Wet Ingredients
In a separate bowl, beat the egg. Add the milk and apple cider vinegar, and mix well.
3. Combine Wet and Dry Mixtures
Make a well in the center of the dry ingredients and pour in the wet mixture. Add the melted butter. Stir gently until just combined. Be careful not to overmix; a few lumps are fine.
4. Heat the Pan
Place a non-stick skillet or a griddle on the stove and set it to medium heat.
5. Cook the Pancakes
Lightly butter the skillet. Pour 1/4 cup of batter onto the skillet and cook until bubbles form on the surface and the edges look set, approximately 2-3 minutes. Flip the pancake and cook for another 2 minutes, or until golden brown.
6. Serve
Stack the pancakes onto a plate. Serve immediately with your choice of toppings like butter, syrup, or fresh fruit.
