Fluffy Oven-Baked Herb Frittata



Ingredients



- 8 large eggs
- 1/2 cup whole milk
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon unsalted butter
- 1 cup fresh spinach leaves, chopped
- 1/2 cup cherry tomatoes, halved
- 1/4 cup finely chopped onion
- 1/2 cup crumbled feta cheese
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh basil, chopped

Instructions



1. Preheat the Oven:
Preheat your oven to 375°F (190°C) and ensure your oven rack is in the middle position.

2. Prepare the Egg Mixture:
In a large bowl, whisk together the eggs, whole milk, salt, and black pepper until well combined and frothy.

3. Sauté the Vegetables:
In a 10-inch oven-safe skillet, melt the unsalted butter over medium heat. Add the chopped onion and sauté for about 3 minutes until they become translucent. Add the chopped spinach and halved cherry tomatoes, and cook for an additional 2 minutes until the spinach is wilted.

4. Assemble the Frittata:
Pour the egg mixture evenly over the sautéed vegetables in the skillet. Sprinkle the crumbled feta cheese, chopped parsley, and chopped basil over the top.

5. Cook on the Stovetop:
Cook on the stovetop for about 3-4 minutes without stirring, just until the edges begin to set.

6. Bake in the Oven:
Transfer the skillet to the preheated oven and bake for 15 minutes until the frittata is puffed up and the center is set.

7. Cool and Serve:
Remove from the oven and let it cool slightly before slicing. Serve warm, garnished with additional fresh herbs if desired.
