Fluffy Vanilla Stove-Top Pancakes
Ingredients
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 2 tablespoons sugar
- 1/4 teaspoon salt
- 2 large eggs
- 3/4 cup milk
- 2 tablespoons unsalted butter, melted, plus extra for the pan
- 1 teaspoon vanilla extract
Instructions
1. Prepare the Batter:
- In a medium-sized mixing bowl, sift together the flour, baking powder, sugar, and salt.
- In another bowl, whisk the eggs until well beaten. Add the milk, melted butter, and vanilla extract, and whisk until combined.
- Gradually add the wet ingredients to the dry ingredients, stirring just until the batter is smooth and all the flour is incorporated. Do not overmix, as this can make the pancakes tough.
2. Preheat the Pan:
- Place a non-stick skillet or griddle on the stove over medium heat. Allow it to heat for about 3-5 minutes, until a small drop of water sizzles on the surface.
3. Cook the Pancakes:
- Lightly grease the pan with a little butter. Use a ladle to pour approximately 1/4 cup of batter onto the skillet for each pancake, leaving space between each one.
- Cook the pancakes for about 2-3 minutes, or until bubbles form on the surface and the edges begin to set.
- Flip the pancakes with a spatula and cook for another 2 minutes until golden brown on the other side.
4. Serve:
- Remove the pancakes from the stove and place them on a platter. You can keep the finished pancakes warm in a low oven (about 200°F) while finishing the remaining batter.
- Serve the pancakes hot with your favorite toppings such as syrup, fresh fruit, or whipped cream.
