Fluffy Yogurt Pancakes with Berry Compote and Salted Caramel Drizzle



Ingredients



For the Pancakes:
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1 cup buttermilk
- 2 large eggs
- 1/4 cup Greek yogurt
- 1 teaspoon vanilla extract
- Cooking spray or oil, for greasing the pan

For the Berry Compote:
- 1 cup strawberries, hulled and sliced
- 1 cup blueberries
- 1 tablespoon honey
- 1 tablespoon lemon juice

For the Salted Caramel Drizzle:
- 1/4 cup caramel sauce
- 1/4 teaspoon sea salt

Instructions



Step 1: Prepare the Pancake Batter
1. In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, salt, and cinnamon. Set aside.
2. In another bowl, combine the buttermilk, eggs, Greek yogurt, and vanilla extract. Mix well until the ingredients are fully combined.
3. Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Take care not to overmix, as a few lumps are fine in the batter.

Step 2: Cook the Pancakes
1. Preheat a non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or a small amount of oil.
2. For each pancake, pour approximately 1/4 cup of batter onto the skillet. Cook until bubbles form on the surface and the edges begin to set (about 2-3 minutes).
3. Flip the pancake and cook for another 1-2 minutes, or until golden brown and cooked through.
4. Remove the pancakes from the skillet and keep warm. Repeat with the remaining batter.

Step 3: Make the Berry Compote
1. In a small saucepan, combine the sliced strawberries, blueberries, honey, and lemon juice.
2. Cook over medium heat, stirring occasionally, until the berries release their juices and the mixture thickens slightly (about 5-7 minutes).
3. Remove from heat and set aside.

Step 4: Prepare the Salted Caramel Drizzle
1. In a microwave-safe bowl, gently warm the caramel sauce for 10-15 seconds until pourable.
2. Stir in the sea salt until fully dissolved.

Step 5: Assemble the Dish
1. Stack the pancakes on serving plates, layering with the warm berry compote between each pancake as desired.
2. Drizzle the top of the pancake stack with salted caramel sauce.
3. Serve immediately and enjoy!
