Fresh Tomatillo Salsa Verde
Ingredients
- 1 lb tomatillos, husked and rinsed
- 2 jalapeño peppers, stemmed and seeded (optional for less heat)
- 1 medium onion, quartered
- 1 tsp salt
- 1/2 cup fresh cilantro leaves, roughly chopped
Instructions
1. Prepare Tomatillos and Jalapeños: Begin by placing the rinsed tomatillos and jalapeño peppers into a large saucepan. Add enough water to cover them completely.
2. Cook Vegetables: Place the saucepan over medium heat. Bring the water to a gentle boil and allow the tomatillos and jalapeños to simmer for about PT10M, or until they soften and change color.
3. Drain and Cool: Once cooked, drain the water and let the tomatillos and jalapeños cool for a few minutes.
4. Blend Ingredients: In a blender, combine the cooled tomatillos, jalapeños, quartered onion, and salt. Blend until you achieve a smooth consistency, adjusting the salt as necessary.
5. Add Fresh Cilantro: Add the roughly chopped cilantro to the blender. Pulse until the cilantro is well incorporated into the mixture but still visible as flecks.
6. Chill Before Serving: Transfer the salsa into a serving bowl. Cover and refrigerate for at least PT30M to allow the flavors to meld.
