Frozen Fruit Fiesta: Candy-Coated Grape and Mixed Berry Medley
Ingredients
- 1 cup red grapes
- 1 cup green grapes
- 1 lemon, zested and juiced
- 1 mango, peeled and diced
- 1 cup pineapple, diced
- 1 green apple, cored and diced
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 2 tablespoons Tajín seasoning
- 1 cup candy coating (vanilla or white chocolate)
Instructions
1. Preparation:
- Rinse all fruits thoroughly under cold water and pat dry with a clean towel.
- Remove stems from the red and green grapes.
- Dice the mango, pineapple, and green apple into bite-sized pieces.
2. Fruit Zest & Mix:
- In a large mixing bowl, combine the red grapes, green grapes, mango, pineapple, green apple, and mixed berries.
- Add the lemon zest and 2 tablespoons of lemon juice to the fruit mixture for a citrusy zing.
- Gently toss the fruit with Tajín seasoning until evenly coated.
3. Candy Coating Process:
- Melt the candy coating in a microwave-safe bowl, microwaving in 30-second intervals and stirring between each interval until smooth.
4. Fruit Freezing Steps:
- Line a baking sheet with parchment paper.
- Individually dip each piece of fruit into the melted candy coating and place it on the lined baking sheet, making sure the pieces do not touch each other.
- Once all fruit pieces are coated and on the tray, place the baking sheet in the freezer.
- Freeze for at least PT1H (1 hour) or until the coating is firm.
5. Serving:
- Remove the tray from the freezer and let the fruit sit for a few minutes to soften slightly before serving.
- Arrange the frozen fruit medley on a vibrant platter for an appealing presentation.
