Garlic and Basil Spaghetti with Asparagus & Spinach Delight
Ingredients
- 12 ounces Spaghetti
- 2 tablespoons Extra Virgin Olive Oil
- 6 cloves Garlic, minced
- 8 ounces Asparagus, trimmed and cut into 1-inch pieces
- 2 cups Spinach, fresh
- 1 cup Tomatoes, diced
- 1/2 cup Fresh Basil leaves, chopped
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- Grated Parmesan cheese (optional, for serving)
Instructions
1. Boil the Spaghetti:
- In a large pot, bring a gallon of water to a boil. Add a teaspoon of salt. Add 12 ounces of spaghetti to the boiling water and cook until al dente, according to package directions (approximately PT10M or 10 minutes). Reserve 1/2 cup of pasta cooking water and then drain the spaghetti.
2. Prepare the Garlic Oil:
- In a large skillet over medium heat, add 2 tablespoons of extra virgin olive oil. Upon heating, add the minced garlic and sauté until golden and fragrant, about PT2M or 2 minutes. Be careful not to burn the garlic.
3. Cook the Asparagus:
- Add the asparagus pieces to the skillet with the garlic oil. Sauté for about PT4M or 4 minutes, stirring occasionally, until the asparagus is tender yet retains its bright green color.
4. Wilt the Spinach:
- Add 2 cups of fresh spinach to the skillet. Stir for about PT2M or 2 minutes, until the spinach wilts.
5. Combine Ingredients:
- Add the drained spaghetti to the skillet. Toss well to coat the pasta in the garlic oil mixture. Adjust the consistency by adding reserved pasta water as needed.
6. Add Tomatoes & Season:
- Toss in the diced tomatoes and fresh basil. Season with 1 teaspoon of salt and 1/2 teaspoon of black pepper. Cook for an additional PT2M or 2 minutes, stirring gently.
7. Serve:
- Serve immediately, garnished with grated Parmesan cheese if desired.
