Garlic and Herb Beef Pasta with Creamy Yogurt Sauce



Ingredients



- 12 oz pasta (such as penne or fusilli)
- 1 lb ground beef
- 1 cup plain yogurt
- 4 cloves garlic, minced
- 1 medium onion, finely chopped
- 2 tablespoons butter
- 2 tablespoons tomato paste
- 1/2 teaspoon chili flakes
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste

Instructions



1. Cook the Pasta:
- Bring a large pot of salted water to a boil over medium-high heat.
- Add pasta and cook until al dente, according to the package instructions (typically about 8 minutes).
- Drain the pasta, reserving 1/2 cup of pasta water. Set aside.

2. Prepare the Beef:
- In a large skillet, melt butter over medium heat.
- Add the chopped onion and cook until soft and translucent, approximately 4 minutes.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.

3. Cook the Ground Beef:
- Add the ground beef to the skillet and cook, stirring occasionally, until browned and cooked through, about 8 minutes.
- Drain any excess fat from the skillet.

4. Create the Sauce:
- To the browned beef, add tomato paste and chili flakes. Stir to combine, cooking for another 2-3 minutes.
- Lower the heat to medium-low and incorporate the yogurt, stirring continuously to create a creamy sauce. Ensure the yogurt does not curdle by keeping the heat under control.

5. Combine and Finish:
- Add the cooked pasta to the skillet with the beef and sauce.
- Toss to coat the pasta evenly; if the sauce is too thick, gradually add reserved pasta water until you reach your desired consistency.
- Season with salt and pepper to taste.
- Sprinkle with fresh parsley before serving.
