Garlic and Herb Stir-Fried Cherry Tomatoes with Pecorino



Ingredients


- 2 cups cherry tomatoes
- 1/2 cup Pecorino cheese, grated
- 2 cloves garlic, minced
- 1 teaspoon chili flakes
- 1/4 cup toasted almonds, roughly chopped
- 3 tablespoons olive oil
- 1/4 cup mint leaves, roughly chopped
- 1/4 cup basil leaves, roughly chopped
- 2 tablespoons lemon juice
- Salt, to taste
- Black pepper, to taste

Instructions



1. Prepare the ingredients: Rinse and dry the cherry tomatoes. Mince the garlic. Roughly chop the toasted almonds, mint, and basil leaves.

2. Infuse the oil: In a large skillet, add the olive oil and heat over medium heat. Once hot, add the minced garlic and chili flakes. Sauté for 1-2 minutes until the garlic is golden and fragrant, taking care not to burn it.

3. Cook the tomatoes: Add the cherry tomatoes to the skillet. Stir frequently, allowing them to blister and soften. This should take about 5 minutes. Season the tomatoes with salt and black pepper to taste.

4. Mix in the cheese and nuts: Lower the heat and sprinkle the grated Pecorino cheese over the tomatoes, stirring gently to combine. Add the toasted almonds, distributing them evenly throughout the dish.

5. Add freshness: Remove the skillet from the heat and immediately stir in the lemon juice, mint leaves, and basil leaves. Toss everything together until well combined and fragrant.

6. Serve: Transfer the stir-fried cherry tomatoes to a serving platter. Garnish with extra basil or mint if desired. Serve warm.
