Golden Brown Avocado and Egg Toast with Crispy Bacon
Ingredients
Main Components:
- 4 slices of thick-cut whole-grain bread
- 4 large eggs
- 2 ripe avocados, peeled and pitted
- 8 slices of bacon
Additional Ingredients:
- 2 tablespoons unsalted butter, divided
- Salt and pepper to taste
- 1 tablespoon lemon juice
- 1/4 teaspoon red pepper flakes (optional)
- Fresh parsley or chives for garnish
Instructions
1. Prepare the Avocado Spread
- In a medium bowl, mash the avocados with a fork until smooth but slightly chunky.
- Stir in the lemon juice, salt, pepper, and red pepper flakes (if using). Set aside.
2. Cook the Bacon
- Heat a large non-stick skillet over medium heat.
- Add the bacon slices in a single layer and cook until crispy, flipping once, about PT10M for 10 minutes.
- Transfer the bacon to a paper towel-lined plate to drain any excess grease.
3. Pan-Fry the Bread
- Drain excess grease from the skillet, leaving about 1 tablespoon.
- Add 1 tablespoon of butter to the skillet and allow it to melt over medium heat.
- Place the bread slices in the skillet and cook until golden brown, approximately PT4M for 4 minutes per side. Remove and set aside.
4. Fry the Eggs
- In the same skillet, add the remaining 1 tablespoon of butter.
- Crack the eggs into the skillet and season with salt and pepper.
- Cook over medium heat until the whites are set but the yolks remain runny, about PT4M for 4 minutes.
5. Assemble the Toast
- Spread the avocado mixture generously over each slice of bread.
- Top with crispy bacon.
- Place a fried egg on each toast.
6. Serve and Garnish
- Garnish with chopped parsley or chives.
- Serve immediately and enjoy!
