Golden-Crusted Chicken Parmigiano with Italian Herb Crust



Ingredients



- 4 (6 oz each) boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs
- 2 tablespoons water
- 1 cup breadcrumbs
- 2 teaspoons Italian seasoning
- 3/4 cup freshly grated Parmigiano-Reggiano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup oil (vegetable or olive oil for frying)

Instructions



1. Prepare the Chicken:
- Place the chicken breasts between two pieces of plastic wrap or wax paper.
- Use a meat mallet to pound each breast to 1/2 inch thickness for even cooking.

2. Set Up the Breading Station:
- In a shallow dish, place the all-purpose flour, mixing in the salt and black pepper.
- In a separate shallow dish, beat the eggs with the water until well combined.
- In a third dish, combine the breadcrumbs, Italian seasoning, and half (3/8 cup) of the grated Parmigiano-Reggiano.

3. Coat the Chicken:
- Dredge each chicken breast in the flour, shaking off excess.
- Dip into the egg mixture, ensuring even coating.
- Press into breadcrumb mixture, ensuring the chicken is fully crusted with the seasoned mixture.

4. Heat Oil:
- In a large skillet, heat the oil over medium-high heat until shimmering but not smoking.

5. Pan Fry the Chicken:
- Carefully place the chicken breasts into the hot oil.
- Fry for 4-5 minutes on each side or until each side is golden brown and the internal temperature reaches 165°F. Adjust heat if necessary to prevent burning.

6. Add Cheese Crust:
- During the last minute of frying, sprinkle the remaining Parmigiano-Reggiano evenly over each chicken breast. Cover the skillet with a lid to allow the cheese to melt.

7. Serve:
- Remove the chicken from the pan and place on a paper towel-lined plate to absorb excess oil.
- Serve hot, optionally garnished with fresh basil or parsley for a pop of color.
