Golden Herb-Infused Butter Roasted Chicken



Ingredients



- 1 whole chicken (4-5 pounds)
- 1/2 cup Kerrygold Pure Irish Butter, softened
- 2 tablespoons fresh rosemary, finely chopped
- 2 tablespoons fresh thyme, finely chopped
- 1 tablespoon lemon zest
- 1 whole lemon, halved
- 4 garlic cloves, minced
- Salt and pepper to taste
- 1 large onion, quartered
- 2 cups chicken broth

Instructions



1. Preheat Oven:
- Preheat your oven to 375°F (190°C).

2. Prepare Herb Butter:
- In a bowl, combine the softened Kerrygold Pure Irish Butter, rosemary, thyme, lemon zest, and minced garlic. Mix well until the herbs and zest are evenly distributed throughout the butter.

3. Prepare the Chicken:
- Pat the chicken dry with paper towels. Season the cavity liberally with salt and pepper, then insert the halved lemon and quartered onion.

4. Butter and Season:
- Gently loosen the skin on the breast of the chicken by sliding your fingers between the skin and the meat, being careful not to tear it. Spread half of the herb butter directly onto the breast meat under the skin. Massage the remaining butter all over the outside of the chicken.

5. Season and Tie:
- Season the entire exterior of the chicken with salt and pepper. If desired, tie the legs together with kitchen twine for even cooking.

6. Roast the Chicken:
- Place the chicken on a roasting rack in a large roasting pan. Pour the chicken broth into the pan to keep the chicken moist during cooking.
- Roast in the preheated oven for about 1 hour and 30 minutes (PT1H30M) or until the internal temperature of the chicken reaches 165°F (74°C) and the skin is golden brown and crispy. Baste the chicken with the pan juices every 30 minutes.

7. Rest the Chicken:
- Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes (PT15M) before carving. This allows the juices to redistribute, ensuring moist, flavorful meat.

8. Serve:
- Carve the chicken, and serve with the pan juices drizzled on top.
