Golden Honey Cornbread
Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1 tablespoon baking powder
- 1/4 teaspoon baking soda
- 1 large egg
- 1 cup buttermilk
- 1/4 cup vegetable oil
- 2 tablespoons unsalted butter (melted)
- 2 tablespoons honey
Instructions
1. Prepare the Oven
Preheat your oven to 400°F (200°C).
2. Mix Dry Ingredients
In a large bowl, combine 1 cup of cornmeal, 1 cup of all-purpose flour, 1/4 cup of granulated sugar, 1/2 teaspoon of salt, 1 tablespoon of baking powder, and 1/4 teaspoon of baking soda. Use a whisk to ensure even distribution of the leavening agents.
3. Combine Wet Ingredients
In a separate bowl, beat 1 large egg. Gradually add 1 cup of buttermilk, 1/4 cup of vegetable oil, and 2 tablespoons of honey. Stir until well mixed.
4. Incorporate Wet and Dry Ingredients
Pour the wet mixture into the dry ingredients. Gently fold together until just combined. Take care not to overmix, as this can make the cornbread dense.
5. Prepare Baking Dish
Grease a 9-inch square baking dish with 2 tablespoons of melted butter, ensuring the entire surface is coated to prevent sticking.
6. Pour and Bake
Pour the batter into the prepared baking dish, smoothing the top with a spatula. Place in the preheated oven.
7. Bake
Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
8. Cool and Serve
Remove from the oven and let cool in the pan for about 10 minutes. Optionally, brush the top with a bit of extra honey for added sweetness and shine before slicing and serving.
