Golden Peach Cobbler Delight
Ingredients
For the Peach Filling:
- 5 large fresh peaches, peeled and sliced
- 1/4 cup brown sugar
- 1 tablespoon cornstarch
- 1/4 cup water
- 1 tablespoon lemon juice
- 2 tablespoons butter or margarine
For the Cobbler Topping:
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 egg
- 1/4 cup milk
- 1/4 cup butter or margarine, melted
Instructions
1. Preheat Oven:
Preheat your oven to 375°F (190°C).
2. Prepare Peach Filling:
In a medium-sized saucepan, combine sliced peaches, brown sugar, cornstarch, water, and lemon juice. Cook over medium heat, stirring frequently, until the mixture thickens slightly and becomes bubbly, approximately 5-7 minutes. Remove the saucepan from heat and stir in 2 tablespoons of butter or margarine until melted and well combined.
3. Transfer to Baking Dish:
Pour the peach filling into a greased 9x9-inch baking dish, spreading evenly.
4. Mix Cobbler Topping:
In a mixing bowl, whisk together the flour, sugar, baking powder, and salt. In a separate small bowl, beat the egg and stir in the milk and melted butter. Gradually combine the wet ingredients with the dry ingredients, stirring gently until just combined (the batter will be lumpy).
5. Assemble Cobbler:
Spoon the cobbler topping over the peach filling evenly, leaving some gaps to allow the filling to bubble through during baking.
6. Bake:
Place the baking dish into the preheated oven and bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the topping comes out clean.
7. Cool and Serve:
Allow the cobbler to cool for at least 10 minutes before serving. Enjoy it warm, optionally with a scoop of vanilla ice cream for added indulgence.
