Golden Potato Dinner Rolls
Ingredients
- 3/4 cup sugar
- 1/2 cup unsalted butter, softened
- 1 cup milk
- 1/2 cup potato flakes
- 1 1/2 teaspoons salt
- 2 1/4 teaspoons instant yeast (1 packet)
- 2 large eggs
- 4 cups all-purpose flour
Instructions
1. Prepare the Yeast Mixture:
- Warm the milk in a small saucepan over low heat until it reaches a temperature of about 110°F (43°C).
- Remove the milk from heat and pour it into a large mixing bowl.
- Add the sugar and instant yeast, stirring gently until both are dissolved.
- Let the mixture sit for about 5 minutes until it becomes bubbly and foamy.
2. Combine the Ingredients:
- In the yeast mixture, add the softened unsalted butter, potato flakes, and salt. Stir until well combined.
- Beat the eggs in a small bowl and then add them to the mixing bowl, stirring to incorporate.
- Gradually mix in the all-purpose flour, 1 cup at a time, until a soft dough begins to form.
3. Knead the Dough:
- Transfer the dough onto a lightly floured surface.
- Knead for about 8-10 minutes until the dough becomes smooth and elastic. If the dough is too sticky, sprinkle with a little extra flour.
4. First Rise:
- Place the dough in a lightly greased bowl, covering it with a damp cloth or plastic wrap.
- Allow it to rise in a warm area for about 1 to 1.5 hours, or until it has doubled in size.
5. Shape the Rolls:
- Once risen, punch down the dough to release the air.
- Divide the dough into 16 equal pieces and shape each piece into a round ball.
- Arrange the balls on a greased baking sheet, making sure they are spaced slightly apart.
6. Second Rise:
- Cover the dough balls with a cloth or plastic wrap.
- Let them rise again for about 30-45 minutes until they have doubled in size.
7. Bake the Rolls:
- Preheat the oven to 375°F (190°C).
- Bake the rolls for about 15-20 minutes, or until they are golden brown on top.
- Remove from the oven and let cool slightly before serving.
