Golden Roasted Spaghetti Squash with Savory Bacon Infusion



Ingredients



- 1 large spaghetti squash
- 2 tablespoons butter, melted
- 1 tablespoon vegetable oil
- 2 tablespoons bacon grease
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon Italian seasoning blend (optional)
- 1 teaspoon adobo seasoning (optional)
- 1 teaspoon Cajun seasoning (optional)

Instructions



1. Preheat the Oven
Preheat your oven to 400°F (200°C).

2. Prepare the Spaghetti Squash
Carefully cut the spaghetti squash in half lengthwise. Use a spoon to scoop out the seeds and discard them.

3. Season the Squash
In a small bowl, combine the melted butter, vegetable oil, and bacon grease. Brush the insides of each squash half evenly with the mixture. Sprinkle salt and black pepper over each half. Add optional seasonings like Italian blend, adobo, or Cajun if desired.

4. Roast in the Oven
Place the squash halves, cut side down, on a baking sheet lined with parchment paper or aluminum foil. Transfer the baking sheet to the preheated oven. Roast for about 40-45 minutes, until the squash is tender and easily scraped with a fork.

5. Shred the Spaghetti Squash
Once roasted, carefully flip the squash over and let cool slightly. Using a fork, gently scrape the insides of the squash to create spaghetti-like strands. Transfer the strands to a serving dish.

6. Finish and Serve
Toss the spaghetti squash strands with any leftover melted butter mixture, if desired, and adjust seasoning to taste. Serve immediately as a delightful side dish or a light main course.
