Gourmet Mediterranean Snack Platter with Butternut Squash & Roasted Red Pepper Hummus
Ingredients
For the Hummus:
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 cloves garlic, minced
- 3 tablespoons tahini
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/4 cup olive oil
- 1 tablespoon sesame seeds
- 1/4 cup Kalamata olives, pitted and chopped
- 1/4 cup roasted red peppers, chopped
- 1/2 teaspoon Calabrian chile flakes
For the Butternut Squash:
- 1 small butternut squash, peeled, seeded, and cubed
- 2 tablespoons olive oil
- 1 tablespoon maple syrup
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
For the Garnish:
- 2 tablespoons pesto
Instructions
1. Prepare the Squash:
- In a large bowl, toss the butternut squash cubes with 2 tablespoons olive oil, 1 tablespoon maple syrup, 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper.
- Preheat a large pan over medium heat on the stove.
- Add the seasoned squash to the pan and cook for about 20 minutes, stirring occasionally, until the squash is tender and caramelized.
2. Make the Hummus:
- While the butternut squash is cooking, combine the chickpeas, minced garlic, tahini, lemon juice, 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper in a food processor.
- Start the food processor and slowly drizzle in 1/4 cup olive oil until the mixture is smooth and creamy.
- Transfer the hummus to a serving bowl and stir in chopped Kalamata olives, roasted red peppers, and Calabrian chile flakes.
- If desired, sprinkle sesame seeds over the top for garnish.
3. Assemble the Snack Platter:
- Arrange the roasted butternut squash around the hummus in the serving bowl.
- Drizzle pesto over the hummus and squash for added flavor.
- Serve the platter warm or at room temperature.
