Gourmet Microwaved Asparagus and Chèvre Delight
Ingredients
- 1 pound white asparagus, trimmed
- 1 quart water
- 1 teaspoon salt
- 2 shallots, finely chopped
- 1 large egg
- 1 cup vegetal asparagus, chopped
- 4 ounces chèvre (goat cheese), crumbled
- ¼ cup grated Parmesan cheese
- 2 yellow onions, thinly sliced
- ½ cup heavy cream
- 1 cup chicken broth
- ½ teaspoon freshly ground pepper
Instructions
1. Prepare the Asparagus:
- In a large microwave-safe dish, add the white asparagus. Pour in the water and add the salt.
- Cover with a microwave-safe lid or plastic wrap, leaving a corner open for steam to escape.
- Microwave on high for PT5M (5 minutes) or until the asparagus is tender but still crisp. Drain and set aside.
2. Prepare the Egg Mixture:
- In a small bowl, beat the egg until it's well mixed. Add the heavy cream and freshly ground pepper, whisking to combine.
3. Microwave the Vegetal Asparagus:
- In the same dish used for the white asparagus, add the vegetal asparagus and salt.
- Cover and microwave on high for PT3M (3 minutes), until bright green and tender.
4. Cook the Onions and Shallots:
- In a separate microwave-safe bowl, combine the yellow onions and shallots. Cover and microwave on high for PT4M (4 minutes), stirring halfway through until softened.
5. Combine Ingredients:
- In a larger microwave-safe casserole dish, layer the microwaved white asparagus, vegetal asparagus, softened onions, and shallots.
- Pour the egg and cream mixture evenly over the layered vegetables.
- Top with crumbled chèvre and Parmesan cheese.
6. Final Cooking:
- Cover the casserole dish and microwave on medium for PT15M (15 minutes), until the mixture is set and the cheese is melted and slightly golden.
