Gourmet Reuben Pasta Bake with Dill Pickles
Ingredients
- 12 ounces pasta (e.g., penne or rotini)
- 2 tablespoons butter
- 1 medium onion, finely chopped
- 2 tablespoons flour
- 1 cup chicken broth

- 1 tablespoon Worcestershire sauce

Instructions
1. Preheat and Prepare:
Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
2. Cook Pasta:
Boil pasta in salted water according to package instructions until al dente. Drain and set aside.
3. Sauté Onion:
In a large skillet over medium heat, melt 2 tablespoons of butter. Add the chopped onion and sauté for about 3 minutes until translucent.
4. Make Roux:
Stir in 2 tablespoons of flour and cook for 1 minute until lightly golden.
5. Create Sauce:
Gradually whisk in 1 cup of chicken broth and 1 cup of milk. Bring to a simmer and allow it to thicken, about 3 minutes.
6. Flavor the Sauce:
Stir in Worcestershire sauce, Dijon mustard, and half of the shredded Swiss cheese. Season with salt and pepper to taste.
7. Combine Ingredients:
In a large bowl, mix cooked pasta, corned beef slices, sauerkraut, sliced cabbage, and the sauce. Combine well until all ingredients are evenly coated.
8. Assemble the Bake:
Transfer the mixture to the prepared baking dish. Sprinkle remaining Swiss cheese and breadcrumbs evenly on top.
9. Roast in Oven:
Place in preheated oven and bake for 25 minutes or until golden brown and bubbly.
10. Rest and Garnish:
Let it rest for 10 minutes before serving. Garnish with diced dill pickles for an extra tangy crunch.
