Gourmet Tuna Melt with Arugula, Swiss Cheese, and Coleslaw



Ingredients



- 2 (6-ounce) cans tuna, drained
- 2 tablespoons olive oil
- 2 scallions, finely chopped
- 1 teaspoon dill, finely chopped
- 1 teaspoon anchovy paste
- 4 slices Swiss cheese
- 4 slices bread (preferably sourdough or whole grain)
- 1 cup arugula
- 1 cup spinach, chopped
- 1 medium tomato, sliced
- 1 cup coleslaw
- 4 sour pickles, sliced
- 2 cups French fries (homemade or store-bought)

Instructions



1. Prepare the Tuna Mixture:
- In a large bowl, combine the drained tuna, olive oil, scallions, dill, and anchovy paste. Mix well until the ingredients are evenly incorporated.

2. Assemble the Sandwich:
- Lay out the bread slices on a clean surface. Spread an even layer of the tuna mixture on two slices of bread.
- Add a slice of Swiss cheese on top of each tuna layer.
- Top with chopped spinach, arugula, and a couple of slices of tomato.

3. Broil the Sandwiches:
- Preheat the broiler in your oven.
- Place the open-faced sandwiches on a baking sheet. Broil for 3 to 5 minutes, or until the cheese is melted and bubbly. Monitor carefully to prevent burning.

4. Complete the Sandwich:
- Meanwhile, evenly distribute coleslaw over the remaining plain bread slices.
- Once the broiling is complete, top the cheesy tuna sides with the coleslaw-covered bread slices, pressing gently.

5. Serve with Sides:
- Slice the sandwiches in half and plate them. Add sour pickles on the side.
- Serve with a side of crispy French fries.
