Gourmet Tuna Salad Sandwich with Celery and Scallions

Ingredients

- 2 cans of tuna, drained (5 oz each)
- 1/4 cup pickle relish
- 1/3 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1/2 cup finely chopped celery
- 1/4 cup sliced scallions
- Salt and pepper to taste
- 8 slices of your choice of bread

Instructions

1. Prepare the Tuna Mix
In a large mixing bowl, flake the drained tuna with a fork until it is nicely separated.

2. Combine the Ingredients
Add 1/4 cup of pickle relish, 1/3 cup of mayonnaise, 1 tablespoon of Dijon mustard, 1/2 cup of finely chopped celery, and 1/4 cup of sliced scallions to the tuna. Mix thoroughly using a spatula, ensuring all ingredients are well incorporated.

3. Season to Taste
Sprinkle salt and pepper over the mixture according to your taste preferences. Stir again to combine the seasonings evenly.

4. Preheat the Stove
While the tuna salad rests, preheat a non-stick skillet over medium heat.

5. Assemble the Sandwiches
Place a generous amount of tuna salad onto 4 slices of your choice of bread. Top each with another slice of bread to form a sandwich.

6. Toast the Sandwiches
Place one or two sandwiches onto the skillet. Toast for approximately 3-4 minutes on each side, or until the bread is golden brown and crispy. Repeat for the remaining sandwiches.

7. Serve and Enjoy
Remove the sandwiches from the skillet, cut them in halves for easier handling, and serve immediately. Enjoy your gourmet tuna salad sandwich!
