Greek-Inspired Chickpea and Kale Sauté with Feta & Lemon
Ingredients
- For the sauté:
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 medium onion, finely chopped
- 1 cup kale leaves, chopped
- 1 cup baby spinach
- Juice of 1 lemon
- 2 tablespoons tahini
- 1 tablespoon hot sauce (adjust to taste)
- Salt and pepper to taste
- For the accompaniments:
- 1 cup Trader Joe's frozen brown rice
- 2 tablespoons parsley, chopped
- 1/2 cup green olives, sliced
- 1/2 cup feta cheese, crumbled
- 1/2 cucumber, diced
- 1/4 cup Parmigiano, grated
- Serving items:
- Whole grain bread, sliced and toasted
- Green leaf lettuce leaves
Instructions
1. Prepare the Frozen Brown Rice:
- Heat the Trader Joe's frozen brown rice according to package instructions.
2. Begin the Sauté:
- Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
- Stir in minced garlic and ground cumin; cook for 1-2 minutes until fragrant.
3. Add Chickpeas and Greens:
- Add drained chickpeas to the skillet, cooking for 5 minutes, letting them turn slightly golden.
- Mix in chopped kale and baby spinach; continue sautéing until wilted, about 5 more minutes.
4. Incorporate Flavors:
- Add lemon juice, tahini, and hot sauce; stir thoroughly to coat the chickpeas and greens.
- Season with salt and pepper to taste and cook for an additional 2-3 minutes.
5. Assemble and Serve:
- In a serving dish, layer the green leaf lettuce. Spoon the sautéed mixture over the lettuce.
- Top with sliced green olives, crumbled feta, diced cucumber, and grated Parmigiano.
- Serve with a side of heated brown rice and whole grain bread slices.
