Green Egg Grilled Turkey with Orange Brine & Rub
Ingredients
- 1 whole turkey (approximately 12 pounds)
- 1 package Traeger’s Orange Brine
- 1 package Traeger’s Turkey Rub
- 1 gallon water
- 1/2 cup kosher salt
- 1/2 cup brown sugar
- 1 cup orange juice
- 2 oranges, quartered
- 4-6 sprigs fresh rosemary
- 4-6 sprigs fresh thyme
- 3 tablespoons olive oil
Instructions
1. Prepare the Brine
Combine the Traeger’s Orange Brine, kosher salt, and brown sugar in a large pot. Add 1 gallon of water and stir until fully dissolved. Add orange juice and quartered oranges.
2. Brining the Turkey
Submerge the turkey into the brine, ensuring it is fully covered. If needed, weigh down the turkey with a plate. Refrigerate and let it brine for at least 12 hours or overnight for maximum flavor.
3. Preheat the Grill
Preheat your Green Egg to 350°F. Set it up for indirect cooking by using a convEGGtor if available.
4. Prepare the Turkey for Grilling
Remove the turkey from the brine; rinse and pat dry with paper towels. Rub olive oil over the entire turkey. Generously apply Traeger’s Turkey Rub all over the turkey, including in the cavity and under the skin.
5. Stuff and Truss the Turkey
Stuff the cavity with fresh rosemary, thyme, and the remaining orange quarters. Truss the turkey legs with kitchen twine to ensure even cooking.
6. Grill the Turkey
Place the turkey breast side up on the prepared Green Egg. Close the lid and cook for about 3 to 3 1/2 hours or until the internal temperature reaches 165°F in the thickest part of the breast.
7. Rest and Carve
Carefully remove the turkey from the grill and let it rest for at least 20 minutes before carving. This allows the juices to redistribute, ensuring a moist and flavorful turkey.
