Grilled Adobo Chicken with Cilantro Lime Rice and Southwest Black Bean Salad



Ingredients



For the Chicken:

- 8 chicken thighs
- 1 cup Adobo sauce
- 1/4 cup vinegar
- 1/4 cup water
- 2 tablespoons vegetable oil
- 5 cloves garlic, minced
- 1 tablespoon cumin
- 1 tablespoon oregano
- 1 teaspoon salt
- 1 teaspoon pepper

For the Cilantro Lime Rice:

- 1 cup rice
- 2 cups water
- Juice of 1 lime
- 1/4 cup fresh cilantro, chopped
- 1 bay leaf
- 1/2 teaspoon salt

For the Southwest Black Bean Salad:

- 1 can black beans, drained and rinsed
- 1 cup corn salsa
- 1 cup diced tomatoes
- 1 cup shredded lettuce
- 1/2 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup guacamole
- Lime wedges, for serving

Instructions



1. Marinate the Chicken:

- In a large bowl, combine Adobo sauce, vinegar, water, vegetable oil, minced garlic, cumin, oregano, salt, and pepper.
- Add chicken thighs and coat them thoroughly in the marinade. Cover and refrigerate for at least 1 hour, ideally for 4 hours to enhance flavor.

2. Cook the Cilantro Lime Rice:

- Rinse rice thoroughly until the water runs clear.
- In a medium saucepan, combine rice, water, lime juice, cilantro, bay leaf, and salt.
- Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. Remove from heat and let sit covered for 5 minutes. Fluff rice with a fork and set aside, removing the bay leaf.

3. Prepare the Southwest Black Bean Salad:

- In a large bowl, combine black beans, corn salsa, diced tomatoes, and shredded lettuce.
- Top with shredded cheese and guacamole. Set aside

4. Grill the Chicken:

- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and grill for 6-8 minutes on each side, or until the internal temperature reaches 165°F.
- Let the chicken rest for 5 minutes before serving.

5. Serve:

- Place a portion of cilantro lime rice on each plate.
- Add a grilled chicken thigh on top of the rice.
- Serve with a scoop of southwest black bean salad on the side, and lime wedges for garnish.
