Grilled BBQ Peach Chicken Thighs with Summer Vegetable Medley
Ingredients
Main Ingredients:
- 4 chicken thighs
- 3 tbsp olive oil
- 1 lemon, juiced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 cup bbq sauce
- 2 medium peaches, halved and pitted
- 1 zucchini, sliced
- 1 yellow squash, sliced
Vegetable Medley:
- 2 ears of corn, kernels removed
- 1 cucumber, sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
Instructions
1. Preparation:
- In a shallow dish, combine olive oil, lemon juice, salt, black pepper, and paprika. Mix well.
- Add chicken thighs to the marinade, ensuring they are evenly coated. Cover and refrigerate for at least 30 minutes for flavors to meld.
2. Prepare the Charcoal Grill:
- Preheat the charcoal grill to medium-high heat. You should be able to hold your hand about 5 inches above the grate for 4-5 seconds.
3. Grilling Chicken Thighs:
- Remove chicken from marinade and let any excess drip off.
- Place chicken thighs on the grill. Cook for about 6-7 minutes on each side, basting with bbq sauce occasionally, until an instant-read thermometer inserted into the thickest part of the thighs reads 165°F.
4. Grilling Peaches and Vegetables:
- While grilling chicken, place peach halves, zucchini slices, and yellow squash slices on the grill.
- Grill peaches for 2-3 minutes per side until nicely charred.
- Grill zucchini and yellow squash slices for about 3-4 minutes per side.
5. Prepare the Vegetable Medley:
- In a large bowl, combine corn, cucumber, and cherry tomatoes.
- Add lime juice, cilantro, salt, and pepper. Mix well.
6. Assembly:
- Serve grilled chicken thighs on a platter alongside grilled peaches and vegetable medley.
