Grilled Cheddar Cheese Sandwich with Creamy Tomato Basil Soup
Ingredients
For the Grilled Cheese Sandwich:
- 8 slices of bread
- 4 tablespoons butter, softened
- 8 slices cheddar cheese
For the Creamy Tomato Basil Soup:
- 1 can (10.75 oz) tomato soup
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh basil leaves, chopped
Instructions
Step 1: Prepare the Grilled Cheese Sandwich
1. Lay out the 8 slices of bread on a clean surface.
2. Spread 1/2 tablespoon of softened butter on one side of each slice.
3. Place 2 slices of cheddar cheese between two slices of bread, buttered sides facing outwards. Repeat with remaining slices to make 4 sandwiches.
Step 2: Pan Fry the Sandwiches
1. Preheat a large skillet over medium heat.
2. Carefully place the sandwiches into the skillet. Cook until the bread is golden brown and the cheese is melted, about 3-4 minutes on each side.
3. Lower the heat if the bread browns too quickly. Remove sandwiches from the skillet and let them rest for a minute before cutting them into halves.
Step 3: Prepare the Creamy Tomato Basil Soup
1. In a medium saucepan, combine the can of tomato soup and 1 cup of heavy cream. Stir together over medium heat.
2. Add salt and black pepper, stirring continuously until the mixture is heated through and smooth, about 5 minutes.
3. Just before serving, stir in the chopped basil.
