Grilled Chicken and Burrata Arugula Salad with Seasonal Fruits



Ingredients



- 2 large grilled chicken breasts, seasoned
- 4 cups fresh arugula
- 1 cup cherry tomatoes, halved
- 1/2 cup strawberries, hulled and sliced
- 1/2 cup plums, pitted and sliced
- 1/2 cup nectarines, pitted and sliced
- 1/2 cup peaches, pitted and sliced
- 1/2 cup seeded watermelon cubes
- 1 ball of burrata cheese
- 1/2 cup crumbled feta cheese
- 1/4 cup ricotta cheese
- 3 tablespoons olive oil
- 2 tablespoons balsamic glaze
- Salt and black pepper, to taste
- 1/4 cup fresh mint leaves, torn
- 1 teaspoon flaky sea salt
- Assorted berries (optional garnish)
- Whipped cream (optional garnish)

Instructions



1. Prepare the Charcoal Grill:
Preheat your charcoal grill to medium-high heat. It typically takes about 10-15 minutes to reach the ideal temperature.

2. Grill the Chicken Breasts:
Season the chicken breasts with salt and black pepper. Place them on the grill and cook each side for approximately 6-7 minutes, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let them rest for 5 minutes before slicing.

3. Assemble the Salad Base:
In a large serving platter, spread the arugula evenly. Add the cherry tomatoes, sliced strawberries, plums, nectarines, peaches, and watermelon over the arugula, distributing them uniformly.

4. Add the Cheeses and Protein:
Place dollops of ricotta cheese and crumbled feta cheese evenly over the salad. Gently tear the burrata cheese ball into pieces and scatter them across the salad. Add the sliced grilled chicken on top.

5. Season the Salad:
Drizzle the olive oil and balsamic glaze over the salad. Season with salt, black pepper, and sprinkle the flaky sea salt.

6. Finish with Garnishes:
