Grilled Chicken and Roasted Veggie Sandwich on Whole Grain Bread
Ingredients
- 2 boneless, skinless chicken breasts
- 1/4 cup Chicken Kraft Salad dressing
- 8 slices whole grain bread
- 1/4 cup pesto
- 1/2 cup roasted red peppers, sliced
- 1/2 cup roasted tomatoes
- 1/3 cup garlic feta dip
- 1 cup mozzarella cheese, shredded
- 2 cups fresh arugula
- 1/4 cup crumbled feta cheese
- 1/2 cup plain yogurt
- 1 clove garlic, minced
- 2 tablespoons lemon juice
- 3 tablespoons extra virgin olive oil
- Salt to taste
- Pepper to taste
- 2 tablespoons chopped fresh herbs (e.g., basil, parsley)
- 1 cup Flavour Bomb grape tomatoes, halved
Instructions
1. Preparation of Chicken Breasts:
- Marinate the chicken breasts in 1/4 cup Chicken Kraft Salad dressing for at least PT1H (1 hour) in the refrigerator.
2. Prepare the Garlic Yogurt Spread:
- In a small bowl, combine the plain yogurt, minced garlic, and lemon juice.
- Add salt and pepper to taste. Mix well and refrigerate until needed.
3. Prepare the Charcoal Grill:
- Preheat the charcoal grill to medium-high heat for about PT15M (15 minutes).
4. Grill the Chicken:
- Place the marinated chicken breasts on the grill.
- Cook for PT6M (6 minutes) on each side or until they reach an internal temperature of 165°F.
- Remove from the grill and let rest for PT5M (5 minutes). Then, slice thinly.
5. Assemble the Sandwich:
- Spread pesto on one side of four slices of bread and the garlic feta dip on one side of the remaining four slices.
- Layer sliced grilled chicken, roasted red peppers, roasted tomatoes, shredded mozzarella cheese, and arugula on the pesto-covered slices.
- Top with the feta cheese and a few halved Flavour Bomb grape tomatoes.
- Close the sandwich with the garlic feta dip-covered slices.
6. Grill the Sandwiches:
- Place the assembled sandwiches on the grill over indirect heat.
- Grill for PT3M (3 minutes) per side, pressing gently, until bread is toasted and cheese is melted.
