Grilled Chicken & Smoked Cheddar Salad with Herbed Buttermilk Dressing
Ingredients
For the Salad:
- 4 boneless, skinless chicken breasts
- Mixed greens (enough to serve 4)
- 6 slices of bacon
- 1 cup smoked cheddar, shredded
- 1/2 cup feta cheese, crumbled
- 1 avocado, sliced
- 8 strawberries, hulled and sliced
- 1 cup cherry tomatoes, halved
- 2 ears corn on the cob
For the Dressing:
- 1/2 cup plain Greek yogurt
- 1/4 cup mayonnaise
- 1/2 cup buttermilk
- 1 tablespoon fresh basil, chopped
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh chives, chopped
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Kosher salt, to taste
- Black pepper, to taste
Instructions
1. Prepare the Charcoal Grill:
- Light charcoal and allow the grill to heat until coals are covered with white ash, ensuring an even temperature for grilling.
2. Grill the Chicken and Corn:
- Season chicken breasts with salt and pepper.
- Place them on the grill, cooking for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
- Grill the ears of corn directly over the heat until charred, about 10-12 minutes, turning occasionally for even cooking. Set aside to cool, and then slice the kernels off the cob.
3. Cook the Bacon:
- Cook bacon slices on the grill or a skillet until crispy. Drain on paper towels and crumble when cooled.
4. Assemble the Salad:
- In a large bowl, combine mixed greens, grilled corn, bacon crumbles, smoked cheddar, feta cheese, avocado slices, strawberries, and cherry tomatoes.
5. Make the Dressing:
- In a small bowl, whisk together Greek yogurt, mayonnaise, buttermilk, basil, dill, chives, Worcestershire sauce, garlic powder, and onion powder.
- Season with kosher salt and black pepper to taste.
6. Slice the Chicken:
- Once slightly cooled, slice the grilled chicken breasts and place atop the salad.
7. Serve:
- Drizzle the herbed buttermilk dressing over the salad just before serving or serve it on the side.
