Grilled Citrus Herb Chicken and Shrimp Skewers with Zucchini & Pineapple
Ingredients
- Main Ingredients:
- 1 lb chicken breast, cut into 1-inch cubes
- 1/2 lb large shrimp, peeled and deveined
- 1 zucchini, sliced into half-inch rounds
- 1 yellow squash, sliced into half-inch rounds
- 1 ripe pineapple, peeled, core removed, and cut into 1-inch chunks
- Marinade:
- 1/4 cup olive oil
- 1 lemon, juiced and zested
- 1 lime, juiced
- 2 tablespoons honey
- 2 sprigs fresh rosemary, finely chopped
- Salt and pepper, to taste
- Sauce:
- 1/2 cup BBQ sauce
- 1 tablespoon pineapple juice
- Additional Ingredients:
- 4 slices bacon, cooked and crumbled
- 1/2 cup corn kernels
- 1 cup mixed greens (lettuce, spinach, etc.)
- 1/2 onion, thinly sliced
- 1 large tomato, chopped
- 1/2 cup grapes, halved
- 1/2 peach, thinly sliced
- 1/4 cup brie, cut into cubes
- 1/4 cup goat cheese, crumbled
- Fresh cilantro, for garnish
Instructions
1. Prepare the Marinade:
- In a mixing bowl, combine the olive oil, lemon juice, lime juice, honey, chopped rosemary, salt, and pepper. Whisk well.
2. Marinate the Chicken and Shrimp:
- Add the chicken cubes and shrimp to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 1 hour, or up to 3 hours for best flavor penetration.
3. Preheat the Grill:
- Preheat your charcoal grill to medium-high heat.
4. Assemble the Skewers:
- Thread the marinated chicken, shrimp, zucchini, yellow squash, and pineapple chunks onto skewers, alternating the ingredients for an appealing visual.
5. Grill the Skewers:
- Place skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The shrimp should be pink and opaque.
6. Prepare the Sauce:
- Mix the BBQ sauce with the pineapple juice in a small bowl.
7. Build the Salad:
- On a serving platter, arrange the mixed greens, corn, onion, tomato, grapes, and peach slices. Sprinkle crumbled bacon, brie cubes, and goat cheese on top.
8. Serve:
- Arrange the grilled skewers on top of the salad. Drizzle the BBQ-pineapple sauce over everything. Garnish with fresh cilantro.
