Grilled Citrus-Marinated Steak Tacos



Ingredients



- Marinade:
- 1 pound skirt steak
- 1 pound flank steak
- 1 cup orange juice
- 1/2 cup lime juice
- 1/4 cup vegetable oil
- 1/4 cup soy sauce
- 2 jalapeños, seeded and minced
- 4 cloves garlic, minced

- For Tacos:
- 12 corn tortillas
- 1 cup pico de gallo
- 1 cup guacamole
- 2 yellow onions, thinly sliced
- 1 bunch radishes, thinly sliced
- 2 green chiles, sliced
- 2 jalapeños, sliced
- 1 bunch cilantro, chopped
- 1 cup jicama, cut into matchsticks

Instructions



1. Prepare the Marinade:
- In a large mixing bowl, combine orange juice, lime juice, vegetable oil, soy sauce, minced jalapeños, minced garlic, and ground cumin. Whisk until well blended.

2. Marinate the Steak:
- Place the skirt and flank steaks in a large, resealable plastic bag or shallow dish.
- Pour the marinade over the steaks, ensuring they are well-coated.
- Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight for maximum flavor infusion.

3. Preheat the Charcoal Grill:
- Light the charcoal grill and allow it to heat until the coals are glowing red with a layer of white ash—ideal for high-heat grilling.

4. Grill the Steaks:
- Remove steaks from the marinade and shake off excess.
- Place the steaks on the hot grill. Grill for approximately 8-10 minutes on each side for medium-rare, adjusting time for desired doneness.
