Grilled Flank Steak Salad with Spicy Peanut Dressing
Ingredients

- 1 lb flank steak
- 4 cups mixed greens

- For the Spicy Peanut Dressing:
- 1/4 cup creamy peanut butter
- 2 tablespoons sriracha
- 3 tablespoons fresh lime juice
- 2 tablespoons toasted sesame oil
- 3 tablespoons warm water
- 2 tablespoons rice vinegar
- 1 tablespoon fresh ginger, grated
- 2 cloves garlic, minced
- 3 tablespoons soy sauce
- 1 tablespoon honey
Instructions
1. Prepare the Flank Steak:
- Preheat your charcoal grill to medium-high heat.
- Season the flank steak generously with salt and pepper on both sides. Allow it to come to room temperature.
2. Grill the Flank Steak:
- Place the steak on the grill. Cook for approximately 5-7 minutes on each side for medium-rare. Adjust the time according to your preferred doneness.
- Once cooked, remove the steak from the grill and let it rest for 10 minutes. Slice the steak thinly against the grain.
3. Prepare the Salad:
- In a large salad bowl, combine mixed greens, spinach, red bell pepper, orange bell pepper, red cabbage, avocados, carrot, cucumber, and jalapeño.
4. Prepare the Dressing:
- In a medium bowl, whisk together the peanut butter, sriracha, lime juice, sesame oil, warm water, rice vinegar, ginger, garlic, soy sauce, and honey until smooth.
5. Assemble the Salad:
- Arrange the sliced flank steak over the salad. Sprinkle with sesame seeds, peanuts, cilantro, and green onions.
- Drizzle the spicy peanut dressing over the top or serve it on the side.
