Grilled Herb-Butter Infused Garlic & Smoked Paprika Chicken
Ingredients
- 4 tablespoons unsalted butter, softened
- 2 tablespoons fresh parsley, finely chopped
- 1 tablespoon fresh thyme, finely chopped
- 3 cloves garlic, minced
- Zest of 1 lemon
- 1 tablespoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 4 boneless, skinless chicken breasts (about 1.5 pounds)
Instructions
1. Prepare the Herb-Butter Mixture:
- In a small mixing bowl, combine softened butter, parsley, thyme, minced garlic, and lemon zest.
- Mix until well blended, forming a uniform herb-butter paste.
2. Season the Chicken:
- Pat the chicken breasts dry with paper towels to ensure a good sear on the grill.
- Season both sides of each chicken breast with smoked paprika, salt, and pepper.
3. Prepare the Charcoal Grill:
- Light the charcoal grill, allowing it to reach medium-high heat. You want a temperature of approximately 400°F (200°C).
- Arrange the hot coals on one side of the grill to create a direct heat zone and an indirect heat zone.
4. Grill the Chicken:
- Place the seasoned chicken breasts over the direct heat zone on the grill.
- Grill for 5-6 minutes on each side or until nicely charred with visible grill marks.
- Use tongs to move the chicken to the indirect heat zone, and brush the tops with the herb-butter mixture.
5. Finish Cooking & Resting:
- Cover the grill with the lid and continue cooking the chicken over indirect heat for another 5-7 minutes or until the internal temperature reaches 165°F (74°C).
- Remove the chicken from the grill and let it rest on a cutting board for 5 minutes to allow juices to redistribute.
6. Slice and Serve:
- Slice the grilled chicken breasts into thick slices.
- Serve warm, garnished with additional fresh parsley and lemon wedges on the side for added flavor.
