Grilled Honey Barbecue Chicken and Bacon Skewers
Ingredients
- 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 12 slices of bacon, cut in half
- 1 cup honey barbecue sauce
- 12 wooden skewers, soaked in water for at least 30 minutes
Instructions
1. Prepare the Skewers:
Soak the wooden skewers in water for at least 30 minutes. This will prevent them from burning on the grill.
2. Marinate the Chicken:
In a large mixing bowl, combine the chicken cubes with 1/2 cup of honey barbecue sauce. Stir to coat the chicken evenly. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes.
3. Preheat the Grill:
Light the charcoal grill and allow it to reach medium-high heat. This should take approximately 20 minutes. Make sure the coals are evenly spread out to ensure even cooking.
4. Assemble the Skewers:
Remove the chicken from the refrigerator. Begin threading the skewers by alternating one piece of chicken and a half strip of bacon. Repeat the process, placing about 4-5 pieces of chicken and bacon per skewer, until all ingredients are used.
5. Grill the Skewers:
Once the grill is ready, place the skewers directly over the heat. Grill each side for about 5-7 minutes, basting with the remaining 1/2 cup of honey barbecue sauce, until the chicken is fully cooked and bacon is crispy. The internal temperature of the chicken should reach 165°F.
6. Serve:
Remove the skewers from the grill and let them rest for a couple of minutes before serving. Serve with extra honey barbecue sauce on the side for dipping if desired.
