Grilled Lemon Herb Chicken with Garlic Butter Vegetables



Ingredients



For the Chicken:

- 4 boneless, skinless chicken breasts (about 6 oz each)
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper

For the Vegetables:

- 1 pound asparagus, trimmed
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 tablespoon chopped fresh parsley

Instructions



1. Marinate the Chicken:
In a bowl, combine olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper. Place the chicken breasts in a zip-top bag or shallow dish and pour the marinade over them. Seal or cover and refrigerate for at least 30 minutes, preferably up to 2 hours for the best flavor.

2. Prepare the Grill:
Preheat your grill to medium-high heat (about 400°F).

3. Grill the Chicken:
Remove chicken from marinade and discard the remaining marinade. Place chicken breasts on the grill. Cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F. Remove from the grill and let rest for 5 minutes before serving.

4. Sauté the Vegetables:
While the chicken is grilling, melt butter in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds. Add asparagus, red bell pepper, and zucchini. Season with salt and pepper. Cook, stirring occasionally, for about 7-8 minutes, or until vegetables are tender-crisp. Sprinkle with fresh parsley before serving.
