Grilled Lemon Herb Chicken with Zucchini and Bell Peppers
Ingredients
- 4 boneless, skinless chicken breasts
- 2 medium zucchinis, sliced into 1/4-inch thick rounds
- 2 bell peppers (any color), cut into strips
- 1 large onion, sliced
- 1/4 cup fresh lemon juice
- 4 cloves garlic, minced
- 2 tablespoons dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup olive oil
Instructions
1. Prepare Marinade:
In a large mixing bowl, combine the lemon juice, minced garlic, dried oregano, salt, black pepper, and olive oil. Whisk together until well blended.
2. Marinate Chicken:
Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour half of the marinade over the chicken, turning the breasts to coat them evenly. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to 4 hours for best results.
3. Prep Vegetables:
In another bowl, toss the sliced zucchinis, bell peppers, and onion with the remaining marinade.
4. Prepare Grill:
Preheat your charcoal grill to medium-high heat, roughly 375°F.
5. Grill Chicken:
Remove the chicken from the marinade and place it on the grill. Cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F. Use a grill thermometer for accuracy.
6. Grill Vegetables:
While the chicken is grilling, place the marinated vegetables in a grill basket or directly on the grill. Cook, stirring occasionally, for about 10 minutes until they are tender and slightly charred.
7. Serve:
Arrange the grilled chicken and vegetables on a serving platter. Garnish with additional lemon slices and fresh oregano if desired.
