Grilled Peach and Tomato Caprese Salad with Charcoal-Kissed Avocado
Ingredients
- 2 ripe peaches, halved and pitted
- 2 medium tomatoes, sliced
- 1 avocado, halved and pitted
- 2 tablespoons olive oil
- 1 lemon, juiced
- 4 ounces fresh mozzarella, sliced
- 4 ounces mozzarella pearls
- 2 cups arugula or arugula mix
- 1 tablespoon balsamic vinegar
- 1 teaspoon sugar
- Sea salt flakes
- Freshly ground black pepper
- Fresh basil leaves, for garnish
Instructions
1. Prepare the Grill
Preheat your charcoal grill to medium-high heat. Allow the coals to become white-hot, ensuring an even distribution of heat.
2. Grill the Peaches and Avocado
- Brush the cut sides of the peaches and avocado with a tablespoon of olive oil.
- Place them on the grill, cut side down. Grill the peaches for about 3 minutes until they are lightly charred and have grill marks. Cook the avocado for approximately 2 minutes.
3. Prepare the Tomatoes and Lemon Dressing
- In a small bowl, combine lemon juice, remaining olive oil, balsamic vinegar, and sugar. Stir well.
- Arrange the tomato slices on a serving platter. Drizzle a bit of the lemon dressing over them, season with a pinch of sea salt and freshly ground black pepper.
4. Assemble the Salad
- Place the grilled peach halves, grilled avocado, and mozzarella slices around the tomatoes on the platter.
- Scatter the mozzarella pearls and arugula over the top.
5. Add Finishing Touches
- Drizzle the remaining lemon dressing over the salad.
- Garnish with fresh basil leaves.
6. Season to Taste
- Sprinkle additional sea salt flakes and freshly ground black pepper to taste.
- Serve immediately while the grilled elements are still warm.
