Grilled Peach, Berry, and Brie Delight with Charcoal-Infused Salmon
Ingredients
- For the Grilled Fruits
- 3 Georgia peaches, halved and pitted
- 1 cup strawberries, hulled and sliced
- 1 cup assorted berries (blueberries, raspberries, etc.)
- 1 tablespoon brandy
- 1 tablespoon sugar
- For the Salmon
- 1 pound salmon fillets
- 2 tablespoons orange liqueur
- 1 tablespoon orange bitters
- Salt and pepper to taste
- For the Cheese Spread
- 4 ounces Burrata cheese
- 4 ounces Chèvre cheese
- 6 ounces Brie cheese
- 4 slices bacon, cooked and crumbled
- Additional Ingredients
- 1 cup club soda
Instructions
1. Prepare the Grill
Preheat your charcoal grill until the coals are white and ashy which should be around 15-20 minutes.
2. Marinate the Salmon
In a small bowl, mix together orange liqueur, orange bitters, salt, and pepper. Place the salmon fillets in a shallow dish and pour the marinade over them. Allow them to soak for about 15 minutes while you prepare the other components.
3. Grill the Fruits
- Toss the peach halves and sliced strawberries with brandy and sugar in a medium bowl.
- Place the peach halves cut-side down on the grill first since they take a bit longer. Grill for 4-5 minutes until they begin to caramelize.
- Add strawberries and assorted berries on a grill pan or basket. Grill for 2-3 minutes, tossing occasionally.
4. Grill the Salmon
Remove the salmon from the marinade and place them on the grill skin-side down. Grill for about 4-5 minutes on each side or until the salmon is cooked through and has nice grill marks.
5. Prepare the Cheese Spread
- In a bowl, mix together the Burrata, Chèvre, and Brie. Mash until the texture is creamy.
- Sprinkle the cooked and crumbled bacon into the cheese mixture and stir to incorporate.
6. Assemble the Dish
- Serve the grilled fruits on individual plates or a large platter.
- Top with the grilled salmon fillets.
- Add a dollop of the cheese spread on top of the salmon.
- Lightly drizzle a splash of club soda over everything for a refreshing finish.
7. Serve
Serve immediately while everything is warm. Enjoy the contrasting textures and flavors of this gourmet dish.
