Grilled Poblano and Corn Salsa with Jalapeño Zest
Ingredients
- 2 large poblano peppers
- 2 ears of corn, husked
- 1 medium red onion, peeled and quartered
- 1 small jalapeño pepper
- 1/4 cup fresh cilantro leaves, chopped
- 2 tablespoons lime juice (about 1 lime)
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- Tortilla chips for serving
Instructions
1. Preheat the Grill:
- Preheat your grill to medium-high heat (approximately 400°F).
2. Prepare the Vegetables:
- Lightly brush the poblano peppers, corn, red onion, and jalapeño with olive oil. Sprinkle with a pinch of kosher salt and black pepper.
- Grill the vegetables: Place the corn, poblano peppers, and red onion quarters directly on the grill. Cook until they are charred and tender, approximately 10-12 minutes for the corn and poblano peppers and 5-7 minutes for the onion. Turn occasionally to ensure even grilling.
3. Roast the Jalapeño:
- Place the jalapeño on the grill and roast for about 4-5 minutes, turning occasionally until it is lightly charred and tender.
4. Cool and Prepare:
- Remove all vegetables from the grill and allow them to cool slightly. Cut the kernels off the corn cobs and dice the grilled poblano peppers, red onion, and jalapeño pepper.
5. Mix the Salsa:
- In a large mixing bowl, combine the grilled corn kernels, diced poblano, red onion, and jalapeño. Add the chopped cilantro, lime juice, ground cumin, and the remaining olive oil. Stir well to combine.
- Season the salsa with additional kosher salt and black pepper to taste.
6. Serve:
- Transfer the salsa to a serving bowl and serve with tortilla chips for dipping.
