Grilled Sesame Lettuce and Carrot Crunch Salad

- 1 tablespoon rice vinegar
- 1 tablespoon sugar
- 1/2 teaspoon kosher salt
- 1/4 cup mayonnaise
- 1 tablespoon sesame oil
- 1 teaspoon poppy seeds
- 1 head iceberg lettuce
- 2 large carrots

1. Preparation of Ingredients
- Wash and dry the iceberg lettuce thoroughly. Cut into quarters, leaving the core intact to hold the leaves together during grilling.
- Peel the carrots and slice them into thin, long strips using a knife or a julienne peeler for a uniform texture.

2. Prepare the Grilling Marinade
- In a small bowl, whisk together rice vinegar, sugar, and kosher salt until the sugar and salt are completely dissolved.
- Add the mayonnaise and sesame oil, and mix until smooth.
- Stir in the poppy seeds for added crunch and flavor.

3. Grilling the Lettuce
- Preheat your charcoal grill until the coals are medium-hot. This usually takes about 10 minutes.
- Lightly brush the iceberg lettuce quarters with a portion of the marinade to enhance the smoky flavor from the grill.
