Ingredients
- 16 sweet mini peppers
- 8 ounces cream cheese, softened
- 4 ounces feta cheese, crumbled
- 2 tablespoons extra-virgin olive oil

- 1 tablespoon canola oil
Instructions
1. Prepare the Grill:
- Preheat your charcoal grill to medium heat. Create a two-zone fire by piling coals on one side for direct heat, leaving the other side for indirect heat.
2. Prepare the Peppers:
- Wash and dry the sweet mini peppers. Cut each pepper lengthwise and remove the seeds and membrane, keeping the stems intact for aesthetic appeal.
3. Make the Stuffing:
- In a medium bowl, combine softened cream cheese, crumbled feta cheese, and chopped chives. Mix until smooth and well-blended.
- Season the cheesy mixture with salt and mix thoroughly.
