Grilled Tequila Lime Skirt Steak with Spicy Mango Salsa
Ingredients
For the Steak Marinade:
- 1 1/2 pounds skirt steak
- 1/4 cup tequila
- 1/4 cup fresh lime juice
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon Tajín
For the Spicy Mango Salsa:
- 1 ripe mango, peeled, pitted, and diced
- 1 small jalapeño, seeded and finely chopped
- 1 tablespoon fresh lime juice
- 1 tablespoon grapefruit soda
- 1 teaspoon chili salt
Instructions
1. Prepare the Marinade:
In a large zip-top bag, combine the tequila, fresh lime juice, minced garlic, olive oil, and Tajín. Seal and gently shake to mix the ingredients.
2. Marinate the Steak:
Add the skirt steak to the marinade, ensuring it is well coated. Seal the bag and refrigerate for at least PT1H (1 hour) and up to PT4H (4 hours) for optimal flavor.
3. Prepare the Grill:
Preheat your grill to medium-high heat (about 400°F). Lightly oil the grill grates.
4. Make the Spicy Mango Salsa:
In a medium bowl, combine the diced mango, jalapeño, 1 tablespoon fresh lime juice, grapefruit soda, and chili salt. Mix well and set aside to allow flavors to meld.
5. Grill the Steak:
Remove the steak from the marinade, allowing excess to drip off, and place it on the hot grill. Cook for PT4M (4 minutes) on each side for medium-rare, adjusting to desired doneness. Remove from grill and let rest for PT5M (5 minutes).
6. Slice and Serve:
Thinly slice the steak against the grain for tenderness. Serve the steak slices topped with the spicy mango salsa.
